This healthy salad recipe is straight from our current total body cleanse aka The Ultimate Reset. Both my husband and I have committed to this cleanse 1x per year for the past 5 years. Every year has been just as if not more powerful than the last. ( more on the cleanse here How to Lose Weight Without Losing a Drop of Sweat! ) We have a variety of options when it comes to salads but we just haven’t gotten ourselves to step away from this option. It’s just too perfect to stop eating. I hope you enjoy it just as much as we do!
3 cups Power Greens
¼ medium carrot, shredded
½ medium cucumber, chopped
½ medium red bell pepper, sliced
¼ cup micro greens or sprouts ( I chose sunflower micro greens)
½ medium tomato, chopped
¼ cup chopped jicama
1/4 medium aguacate
1 Tbsp. fresh chopped cilantro (optional)
2tbs toasted pumpkin seeds. ( bought raw & toasted in toaster oven)
Combine all ingredients in a large bowl; toss gently to blend. Top with toasted pumpkin
DIY Lemon-Vinaigrette dressing
½ cup extra-virgin olive oil
¼ cup apple cider vinegar
1 tsp. Himalayan salt
1 tsp. raw honey (or pure maple syrup)
2 Tbsp. fresh lemon juice
Place oil, vinegar, salt, honey, and lemon juice, plus herbs (if desired), in small bowl; mix well.
