Healthy Banana Pancakes. This is what I call the PERFECT Sunday morning breakfast, ESPECIALLY after a Sunday RUNday long run. This is my go-to breakfast recipe from my FIXATE cookbook. It’s loaded with 101 great tasting healthy recipes but this one…this one is a Sunday brunch must!

Healthy Banana Pancakes
(gluten free・dairy free)
1 cup unsweetened almond milk
2 large eggs
1 large ripe banana
1 tsp pure vanilla extract
1 tsp baking powder
1/2 tsp ground cinnamon
1 dash sea salt
2 cups old-fashioned rolled oats
1/2 tsp extra virgin organic coconut oil
banana slices, natural PB & honey to top
*If you’d like to make this recipe gluten-free, purchase gluten-free oats and baking powder.
1. Place almond milk, eggs, banana, extract, baking powder, cinnamon, salt, and oats in the blender. Blend until smooth.
2. Heat oil in a non-stick skillet over medium-low heat.
3. Pour 1/4 cup batter onto the skillet; cook for 2 to 3 minutes, or until bubbles form around the edges of the pancake. Flip with a spatula; cook for an additional 90 seconds.
4. Continue with remaining batter. Serve with banana slices, natural PB & raw honey.
