Yes I know, this pile of mush looks nothing like pancakes. To be honest they taste nothing the like pancakes most of us are use to either. Nevertheless they are AMAZING!
When it comes to pancakes: Say NO to refined carbohydrates. These “pancakes” are incredibly filling and jam packed with nourishment! As you can see, their base ingredients are a combination of flaxseed, hemp, and pseudograins — packed with nutrients!
NOTE | Cook them at a low temperature to conserve their nutritional density.
I personally LOVE pairing them with banana slices + natural honey or maple syrup.
Sweet Potato and Wild Rice Pancakes
1 cup water
1 cup cooked quinoa
1 cup mashed yam or sweet potato
1/2 cooked wild rice
1/4 cup ground flaxseed
1/4 cup ground sesame seeds
2 tsp aluminum-free baking powder (optional )
1. Add all ingredients to a food processor. Pulse until smooth.
2. Use a non-stick pan over a low-medium heat. Add coconut oil spray, add batter.
4. Wait until bubbles form on the top of the pancake, then flip, and at cook for about 5
Do not expect them to flip like regular pancakes. I like to cook them covered.
