When vegan’ism strikes…

When veganism strikes, we shop for Tempeh!!! About 1x per year Ray & I go on a vegan diet to help detox, reset and give our bodies some rest. This whole meat eating thing takes A LOT of energy for your body to process, it’s true. So going vegan is a MUST do for us, especially if we notice a bit of sluggishness creeping in [is that a word?]. But anyway.

Tonight’s dinner called for pure savory DELICIOUSNESS!!!

…and so will the following 4 nights. Dinner salad for 2.  Meal Prep 1x feeds 2 for a whole week.

For my 21 Day  Fit Latinas Challenger :

Kale & Jicama / Tempeh / [ aguacate] I dice up the aguacate fresh right before eating.
1.5 green / 1 red / 1 blue


If you haven’t tried tempeh before, this is the PERFECT recipe, to begin with.

Makes 1 Serving
2 Tbsp. apple cider vinegar
2 Tbsp. Bragg Liquid Aminos
1½ tsp. sesame oil
½ clove garlic, chopped (optional)
4 oz. tempeh, cut into ½-inch strips

Combine vinegar, Bragg Liquid Aminos, sesame oil & garlic in a baking dish; mix.
Place tempeh in a baking dish, coat well on all sides. Marinate for 1 hour, covered, in the refrigerator, turning once after 30 minutes.
Preheat oven to 350° F.
Bake for 10-15 min, flip, bake for 10-15 min more, or until golden brown.

I typically leave it marinating overnight for an extra vibrant flavor

Do you pre-cook all your food at the beginning of the week? Does it stay fresh all week?
Yes! I cook it ALL. My Food Containers keep my food fresh from Sunday night till Friday night.  This works for me and I’ve been doing it for 3 years now.

Do you get bored of eating the same thing every day?
Truthfully…Sometimes. Ray & I eat the same thing every day and typically stick to the same plan for at least 2 weeks. We make little trade-offs here and there throughout the week like turkey for chicken or broccoli for brussels sprouts. At the end of the day, our #1 goal is to get results.

Do you ever cook a nice warm meal and eat it right after? Of course! Mostly on Sundays for Breakfast and the occasional Home Cooked Romantic dinner for two.

What’s up with the colors at the end (yellow, red, purple)?
The colored containers are the meal portions used in 21 Day Fix/21 Day Fix EXTREME. I use them to measure all my food. This is the program I coach all of my challengers through. It’s a portion control/balanced eating system.
